Beetroot & Red Cabbage Salad


2 small beetroots

Half a small red cabbage

1 small carrot

1 tablespoon mayonnaise

1 tablespoon natural yogurt

1 teaspoon balsamic vinegar

1 tablespoon lemon juice

Sea salt

Black pepper

A handful of mint

Chili flakes

Black sesame seeds (optional)

Peel and grate the beetroot and carrot. You may want to wear gloves to do this so as not to stain your hands

Finely slice the red cabbage

Mix the beetroot, carrot and cabbage in a large mixing bowl

Add the mayonnaise, yogurt, vinegar and lemon juice to the bowl, season, and mix well

Spoon out into a serving bowl, then finely chop the mint and scatter over the top. Finish with a sprinkling of chili flakes and sesame seeds
