Spiced Butter Beans with Coconut

This is a great alternative to tinned baked beans which are loaded with refined sugar

Use good quality butter beans, ideally from a jar, such as Belazu or Bold Bean Co brands. They are much plumer and tastier than the cheaper tinned varieties

As well as serving with a crisp skinned, fluffy baked potato, try serving this with rice, or scopp up with warmed flatbread

Ingredients

1 tablespoons olive oil

1 red onion - finely sliced

1 clove garlic - crushed

2 medium tomatoes - finely chopped

6-8 sun dried tomatoes

370g jar butter beans - drained

1-2 tablespoons harissa

1 x 400ml tin of coconut milk

Large pinch of salt

A good few grinds of black pepper

A squeeze of lemon juice

1 green chilli - finely sliced

Method
Heat the oil in a large frying pan, then add the onion and cook until softened and starting to brown

Add the garlic, and the fresh and sun dried tomatoes and cook until the fresh tomatoes start to break down, then add the remaining ingredients, except for the lemon juice, stir gently and cook until the sauce has reduced and thickened. Finish off with a squeeze of lemon juice and a scattering of the sliced green chili

Serve with a crispy baked potato, or with flat bread, or rice
